roasted delicata squash

Delicata squash is one of my favorite fall squashes - and my favorite way to enjoy it is roasted with garlic. Thought I'd share the recipe - it's super tasty!!

Easy Garlic Delicata

1 delicata squash
1 tbsp olive oil
1 clove garlic, minced
2 tbsp chopped fresh parsley

Preheat oven to 375. Oil a 9x13 baking dish. Peel delicata, slice in half, remove seeds. Cut into ½ inch slices. Place in baking dish and toss with olive oil, garlic, and parsley. Bake 30 minutes or until tender. Serve and enjoy!!
